Comments Off on SAF Instant Yeast – The difference between Red and Gold

One of the questions about SAF Instant Yeast asked on a daily basis at Kitchen Kneads is,

“What is the difference between SAF Instant Red Yeast and SAF Instant Gold Yeast?”

The explanation is actually quite simple. The SAF Red Yeast is used for all types of dough and the SAF Gold Yeast is formulated for doughs that require more sugar, such as cinnamon rolls.

The Saf Instant Gold is a special strain called osmotolerant yeast. Typically, the sugar in a recipe enhances the yeast to activate, but in recipes where the sugar to flour ratio is higher, the sugar will actually impede the activation process by pulling water away from the yeast and leaving the yeast unable to activate. This is where the osmotolerant yeast comes in. It actually thrives on the higher amounts of sugar! There’s no need to proof your yeast, just add it directly to your flour and watch the fast acting yeast do its job!

SAF Red Yeast can also be added to your flour and doesn’t have to be proofed in water before adding it to the other ingredients. It is wonderful for all kinds of dough such as bread, pizza, rolls, and focaccia. It can also be used in a bread machine just like any other instant yeast.

 

 

 

 

 

Similarities Between the Two

Both yeasts comes in a 1 lb. vacuum packed package. Upon purchase, the yeast looks and feels like a small brick, but once the package is opened you can see the small yeast grains are loose.  They are both Gluten Free and Kosher.

The best way to store it is in an air tight container. I keep mine in a Pete jar like this and store it in the freezer. There’s no need to defrost it before use, just scoop it out of the container and add to your recipe!

Whole Wheat Bread
This is a delicious and versatile dough that is great for making bread, breadsticks, cinnamon rolls or whatever you desire!

Ingredients
  • 7 cups warm water (think comfortable shower warm)
  • 2 TBS dough enhancer
  • 3 TBS liquid lecithin
  • 2 TBS SAF Instant Yeast Red label
  • 1/3 cup raw honey
  • 2 TBS salt
  • 1/4 cup gluten flour
  • 16-18 cups white wheat flour (this will vary)

  • 1/4 cup gluten flour

Instructions
  1. Measure all of the ingredients, except for the flour and salt into your electric mixing bowl. Put in 7 cups flour and mix on medium speed until all is mixed and soupy looking. Add remaining flour and salt and mix until the dough cleans the side of the bowl and dough doesn’t stick to your finger. Now it is time to knead your bread. Keeping your mixer at a medium setting, let it knead the bread. Most mixers will take around 8 minutes. You can check the dough to see if it's kneaded enough by taking a small amount of dough and stretching it apart similar to taffy. You want it to get a good stretch. If it breaks, it needs to be kneaded longer, if it stretches then take the dough out and divide it into 5 loaves. Shape into loaves and put them into 5 eight inch greased loaf pans. Let rise until double in size. Bake in a preheated 350 degree oven for 35 minutes.
